Need a Quick Dinner? Try These Salmon Bites

Hi Reader,

I've been eating a lot of salmon lately. It's pretty easy to cook, which is probably why I keep coming back to it. These salmon bites are what I make when I want something quick. I throw them in the air fryer because it's usually a small amount I'm making, and I don't want to heat up the whole oven.

Here's what I do:

🐟 I use a salmon seasoning most of the time, but any seasoning you prefer works. Sometimes I'll switch it up depending on what I have.

🐟 Air fry at 400°F for about 5-7 minutes. They get crispy on the edges and stay tender inside.

🐟 Perfect for salmon bowls or served alongside some French fries.

🐟 I try to always keep a bag of frozen salmon in the freezer. I can defrost it quickly and use it whenever I need it. It's perfect for those weeknights when I didn't plan ahead for dinner.

That's it. Quick protein, minimal cleanup, and you can make as much or as little as you need.

Happy Cooking,

Tanya Harris

jerk chicken and rice in pan

Hi Reader, If you need a dinner that actually fills people up without a bunch of pots to wash, this one-pot jerk chicken and rice is it. I love how flavorful it is, and I love that it combines jerk chicken and rice and peas, two of my favorite recipes, into one dish. The chicken cooks right in the rice, so everything gets flavored together. All you really need is a quick sear on the stovetop, and then you let the oven do its thing. black bean soup with spoon

Hi Reader, I’ve always loved black beans, and my go-to black bean meal is black beans with rice and chicken. But it’s soup season, and I really love this black bean soup. Black Bean Soup Recipe I made this one in my pressure cooker to keep it weeknight friendly—45 minutes, and you’re done. You can also make it on the stovetop if you have more time. The smoky ham hock gives it so much flavor, and I love loading it up with jalapeños, red onions, and plenty of sour cream. If you’re a black bean...

Hi Reader, I just got back from spending the holidays in Jamaica, and I'm still thinking about the food. Every time I visit, I'm reminded why Caribbean cooking holds such a special place in my heart—and my stomach. I spent time with family, visited the house where I spent many summers, and ate some amazing food. Which brings me to one of my all-time favorite Jamaican dishes: Oxtail.
