Potato and Sausage Soup Recipe aka Zuppa Toscana


Hi Reader,

I've been a fan of this potato and sausage soup, aka Zuppa Toscana, for ages. With it getting cooler, I'm all about the comfort food, and this one is perfect for those quick weeknight dinners when you want something that'll actually fill you up. Seriously, I get FULL off this soup, not something I can say about most soups!

This soup is everything you want when the weather gets chilly:

๐Ÿฅ„ Creamy but not heavy โ€“ It has that perfect rich texture without being too much

๐Ÿฅ„ Loaded with good stuff โ€“ Tender potatoes, savory sausage, fresh kale, and a creamy broth that's just chef's kiss

๐Ÿฅ„ One-pot wonder โ€“ Everything cooks in one pot, which means less cleanup (you're welcome!)


My favorite pot for making this soup is my Staub Dutch oven. It's an investment piece for sure, but one that gets a lot of use during soup and stew season. It holds about 3 quarts of liquid and is perfect for smaller batches of soups and stews.

This soup tastes like you spent hours on it, but it's actually pretty straightforward. And if you're like me and always make too much soup, this one freezes beautifully.
