Soup and Stew Week + This Week's Menu

Hi Reader,

Soup season is officially here, so this week's menu is all soups and stews. There's a little Southern, a little Jamaican, and most of them come together in one pot.

This Week's Menu

Five pots to get you through the week, from a smoky Southern stew to my mom's stew peas.

Church Fundraiser Favorite: Easy Brunswick Stew

A tomato-based Southern stew with smoked meat, lots of veggies, and a tangy BBQ sauce. Some of the best Brunswick stew I've had came from a church fundraiser here in North Carolina. When they aren't serving it, I make it at home.

From a reader: Wonderful and full flavored!

Leftover Ham Night: Split Pea Soup with Ham

Hearty, smoky, and a great way to use up leftover ham. It's a one-pot dinner that makes a weeknight a lot easier.

From a reader: Such a delicious and filling recipe! My family loved it. Can't wait to make it again.

Sunday Dinner: Chicken and Dumplings

Comfort food at its finest, all in one pot, with big fluffy dumplings that steam right on top of the broth. My husband grew up with the rolled kind, but I make the fluffy ones because they remind me of the dumplings I grew up eating.

From a reader: This was absolutely delicious! I made a triple batch for 15 of my family & everyone loved it!

From My Mom's Kitchen: Jamaican Stew Peas

Stew peas was on our weekly dinner rotation growing up, and this is my mom's recipe. It's made with red kidney beans and coconut milk, and it's pure comfort in a bowl. Serve it over white rice.

From a reader: I had never used coconut milk in stew peas before, however, I decided to follow the recipe exactly. It was absolutely delicious!!!

Pressure Cooker Night: Black Bean Soup

Hearty and smoky, with a ham hock for flavor. I usually make it in my pressure cooker for a quicker dinner, but it simmers on the stovetop just as well when I have more time.

One More from a Friend

If you want a sixth pot, try Hamburger Vegetable Soup from my friend Imma at Immaculate Bites.

spinach artichoke dip in cast iron skillet

Hi Reader, This spinach artichoke dip is a family favorite in my house. The spinach, tender artichokes, and melted cheese are in perfect harmony. The key is the ratio: too much spinach and the dip can feel heavy, while too much cheese overpowers everything else. Getting that balance right gives you a rich, creamy dip with plenty of texture in every single bite. whole chicken in slow cooker

Hi Reader, Slow-cooker whole chicken might just be the best dinner shortcut in my kitchen right now. I have been using my slow cooker a lot lately to see what actually turns out great and what really is not worth the hype, and this recipe easily made the cut. Whole chickens are such a staple because one bird stretches so far. You get tender, juicy meat with hardly any hands-on work, plus enough shredded chicken for tacos, quick salads, and easy dinners all week long. A simple spice rub and a...

cooked salmon in air fryer basket

Hi Reader, This air fryer salmon has been one of my most popular recipes for a while, and for good reason. Salmon in the air fryer is not only so easy to make, but the way the outside gets perfectly crisp while keeping the inside juicy and flaky is pure magic. It comes together so fast, and it's so good over rice (y'all know I love some rice) with a side of vegetables.
