5 Easy Dinners for Busy Weeknights

We are back in the busy season. Kids are back in school, and life is just moving and grooving. This is when I rely on an easy dinner.

Here are five easy dinners for when you want something good on the table fast.

Juicy Ground Turkey Tacos

Seasoned ground turkey for taco night, made in one skillet. I use my own seasoning instead of a packet.

Pan-Seared Pork Shoulder Steaks

Juicy pork steaks with a golden crust, ready in about 20 minutes. They go with just about any side.

Cream Cheese Chicken

From my friend Kathryn's site. Chicken and mushrooms in a cream cheese sauce, on the table in about 30 minutes. She serves it over rice.

Spicy Vodka Rigatoni

Rigatoni in a creamy tomato vodka sauce with spicy Italian sausage.

Zuppa Toscana

A one-pot soup with Italian sausage, potatoes, kale, and a creamy broth. It's the comfort one in the bunch.

All delicious, all weeknight-friendly. I hope you enjoy them all.

Happy Cooking,

chicken tenders on wire rack baking dish

Hi Reader, When my brain is fried, and I can't figure out what to make for dinner, I make chicken tenders. I love how easy they are as a base. You can toss them in whatever sauce you want or just use them as a dip. Make sure to bake them on a baking sheet with a rack (Amazon affiliate link) to keep them crispy. 👉🏾 Here's the recipe: Crispy Oven Baked Chicken Tenders The one tip I want you to take away from this recipe is to toast your panko breadcrumbs in the oven before you bread the...

Tanya holding BBQ shrimp

Hi Reader, We spent spring break in New Orleans and had the best time. A gator tour, more food than I can list, and a whole lot of walking it off after. The BBQ shrimp stuck with me. It's not actually barbecued. It's jumbo shrimp simmered in a buttery, garlicky, Worcestershire-spiked sauce, and you eat it with crusty bread for soaking up every last bit of that sauce. Nothing sweet, nothing sticky, just bold Louisiana flavor in one skillet. 🍴 Get the recipe: New Orleans BBQ Shrimp. If this one...
