My Go-To Recipe for Costco Chuck Roast


Hi Reader,

I pick up a chuck roast from Costco pretty regularly, and this slow cooker pot roast has become one of my favorite ways to use it. You do a little work in the morning, then the slow cooker does everything else while you go about your day. The meat comes out so tender it practically falls apart, and those carrots and potatoes soak up all that rich, savory flavor.

Now, let me tell you about the gravy because this completely changed things for me. I've always used a roux to thicken gravy, but I tried this French technique called beurre manié for this recipe.

You mix softened butter and flour together into a paste, then whisk it into the cooking liquid at the end. It results in silky, smooth gravy.

I'm honestly excited to use this technique on other recipes now. The whole meal cooks for 8-10 hours on low, so you can start it in the morning and come home to a completely ready dinner. If you try it, let me know what you think of that gravy technique!
