Skillet Pork Chops for Busy Weeknights


Hi Reader,

I know weeknights can be tough when you're trying to figure out dinner. Last Monday, I was staring into the fridge with zero ideas. I grabbed some pork chops and had them on the table pretty quickly.

These pork chops are perfectly seasoned and come out juicy every time. Just a hot skillet and some simple ingredients you probably already have.

For sides, I threw together:

๐Ÿš Yellow rice with green peas mixed in.

๐Ÿš A can of low-sodium black beans seasoned with green seasoning from my freezer. I added about 2 Tablespoons to 1 can of beans while it simmered on the stove.

Everyone was happy, and the cleanup was minimal. That's a win in my book.

Here's something I do:

I keep thinner cuts of meat on hand for nights like this. They cook fast, and I can season them with a dry rub instead of waiting around for a marinade to do its work. Pork chops, chicken cutlets, thin steaks, they're all lifesavers when life gets busy.

This recipe works with whatever you have on hand: rice, roasted vegetables, a quick salad, mashed potatoes are all good options.
