My go-to broccoli cheddar soup recipe


Hi Reader,

Soup season is here, and I'm all about it. There are so many different kinds to make, but cream-based soups are my favorite.

I've been working on this broccoli cheddar soup for a while now. It does take a little prep work because I cut onion, celery, and carrot along with the broccoli to really build up the flavor.

Those aromatics make such a difference. After the vegetables soften, I add flour to thicken everything up, then stir in broth and cream to make it nice and smooth.

You can blend yours completely smooth like I do, or keep it chunky if you prefer. I also add a touch of nutmeg, which sounds weird, but it does well with the cream and vegetables.
