My favorite way to cook a whole turkey


Hi Reader,

I'm done with the traditional way of roasting turkey. Last Thanksgiving, I spatchcocked mine, which drastically cut the cooking time. My large bird was roasted in under 2 hours, and every single bite – white meat, dark meat, all of it – was juicy and delicious.

Now, I know "spatchcocking" sounds intimidating, but it's just cutting out the backbone with kitchen shears.

One more thing, don't toss those pan drippings. Use them to make gravy that's full-bodied and delicious.
