Sweet Potato Casserole (No Marshmallows!)

I know sweet potato casserole is one of those dishes people have strong opinions about, so let me just say it: this version has no marshmallows.

Before you click away, hear me out. What does it have? A crispy oat-and-brown-sugar topping with cinnamon that gets perfectly golden.

And the smell while this bakes? Amazing. Your whole house smells like brown sugar and cinnamon. Hooray!

The sweet potato base is creamy and perfectly spiced, and that oat topping adds the crunch and sweetness you want without being overly sugary. It's the kind of dish that works for holiday dinners but is simple enough to make any time you're craving it.

A few quick tips:

๐Ÿ  Roast your sweet potatoes instead of boiling โ€“ they get sweeter and have better flavor. You could also air fry them.

๐Ÿ  Use cold butter in the topping. It makes it nice and crunchy, which pairs perfectly with the smooth filling.

๐Ÿ  Make it ahead: prep the casserole (no topping), cover, and refrigerate up to 2 days. Let it sit out 30 minutes, add the topping, then bake.
